Chardonnay 2004Winemaker, Mike McRae's Comments: A complex wine that showcases our new oak This cool climate Chardonnay with its lemon and pear aromas and flavours has a toasty bouquet with good integration of flavours from the oak and fruit. It has a great mouthfeel with persistence on the finish. Suggested Foods: Well suited to seafood, pasta and white meats. Suggested temperature to serve - 10 to 12°C. Suggested Cellaring: An engaging wine that will reward cellaring for 2 - 4 years Viticulture: 2004, the latest vintage on record for Montara in 34 years, led to a long growing season with flavours building up gradually. The grapes were picked from Montara's 33 year old vines on 5th April 2004. Vinification & Maturation: The grapes were machine picked, destemmed, crushed and pumped into a stainless steel in-field mobile tank in 30 seconds. Cold settled. Fermented in stainless steel tanks. Transferred to French oak barriques to finish fermentation. Extended lees contact. No malolactic fermentation. Matured in extremely tight grained new French oak barriques for 5 months to impart subtly and allow the layers to unfold.
