Cabernet Sauvignon 2000

Winemaker, Mike McRae's Comments:

Chocolatey oak derived bouquet with integrated berry fruit flavours and spice. The delightful mocha overtones and fine persistent tannins result in a soft harmonious mouthfeel - a medium bodied Cabernet with elegance.

Suggested Foods:

Ideal with strongly flavoured meats, cheeses.

Suggested Cellaring:

2004 - 2006

Viticulture:

Consistently hot dry summer conditions resulted in a much earlier than usual season that produced low yields. The grapes were picked early April 2000 from Montara’s 30 year old vines, destemmed, crushed and pumped into a stainless steel mobile tank in 30 seconds.

Maturation:

Matured exclusively in 3 yr old French oak barriques for 12 months.
